“Bulk Cooking”: Healthy, Easy Fudge, w/ Toasted Cacao Nibs




Ever see a picture that just talks to you? This was it! Ha!

EASY FUDGE WITH TOASTED CACAO NIBS

VIA THE GRATEFUL TABLE

INGREDIENTS
3 c. raw cacao nibs
1 c. melted coconut oil
1/4 tsp. salt
1 tsp. vanilla
2 c. dates, halved
1/2 c. raisins
2 1/4 c. macadamias, roasted, unsalted (one 8-oz. package)

PREPARATION

1. Toast in oven at 375 degrees for 10-15 minutes in iron pan; stir some. Turn oven off and let finish toasting for 10-15 minutes more: > 3 c. raw cacao nibs
2. Process toasted cacao nibs until quite smooth, then add: > 1 c. melted coconut oil > 1/4 tsp. salt > 1 tsp. vanilla
3. Add to big mixing bowl with: > 2 c. dates, halved > 1/2 c. raisins > 2 1/4 c. macadamias (1 8-oz. package roasted, unsalted)
4. Spread in loaf pan, then refrigerate overnight.
5. Turn the solid fudge mixture out onto cutting board (run upside-down pan under hot water if necessary). Cut into slices; wrap each slice individually for longer storage; will last in refrigerator for a month or two

Short Term Mission Trip 2014





Most of you know ,I have been growing in my faith for the past year. God placed a yearning for me  to serve at Skyline's beautiful Café, attend a great bible study class on Thursday mornings and this July serve on a Missions Trip to Nuneland. Note: name made up for security reasons. 


I'm asking God to put a giving heart to family and friends and the blogging world so I can help serve in this years short term mission trip. The cost is $2,500. Yeah, I know. Being a single parent barely making ends meet coming up with $2,500.00 is short of a miracle however I truly believe with God anything is possibly.


I have fundraisers in mind yet wanted my out of town blogging buddies and Facebook Friends to partake in my fundraising. Every bit helps!



There are several ways to give:

1. Being part of my Prayer Team & Praying for our Nuneland Team.

First Yard Sale Finds for 2014

With working Saturdays for the last 4 months I missed out on going to the yard sales. Now having Saturdays off -this was just the thing I needed.  Take a look at the bargains.
This chair was given to an 80 year old lady by one if the Gabor sisters during the time she worked at a Spa in North County San Diego. Love finds with a story!

Today being Monday the first day back to regular work mode, I decided to start the New Year off with a mini routine for "me time".  I have always been a firm believer of me time however never emplemented it in my life. At times we must just DO.

I really don't mind the electronics for kids. It actually keeps them together and safe. Notice I'm sitting right behind them watching like the eye in the sky! Ha!

Yesterday Julia's Brother,Rodney and I went to Graffiti Beach in South Park /Golden Hills near Downtown San Diego. Julia saw the dress a few weeks ago during the South Park Luminaries Walk. Looking at the price tag, she never imagined owning it . She took at look at the price and said Oh, Momma some day! Well her day came! The look on her face was priceless.

Side Front Braid
  1. Part your hair pretty far on one side (whichever side works best for you)
  2. Select three strands of hair to braid with and do a reverse/inverted french braid where you simply braid the hair under instead of over and keep adding hair in mostly from the top of your head
  3. Important: don't braid too tightly! keep that braid low on your forehead as you go
  4. Pin somewhere by your ear or finish off braid and tie with a skinny hair tie
  5. Use some hair spray to control fly aways
  6. Practice, practice, practice!

Candy Cane Brownie Lollipops

INGREDIENTS

1 pkg (18-21 oz or 450 g) fudge brownie mix (plus ingredients to make brownies)
24 candy canes
10 oz (300 g) chocolate-flavored almond bark
Additional decorations such as red jimmies (optional)

DIRECTIONS

Line Medium Sheet Pan with a 13-in. (33-cm) piece of Parchment Paper; lightly spray with nonstick cooking spray and set aside. Prepare brownie mix according to package directions; pour batter into pan. Bake 30 minutes or until wooden pick inserted in center comes out with moist crumbs attached. Remove from oven to Stackable Cooling Rack; cool 20 minutes or until still slightly warm.

Meanwhile, cut off straight ends of candy canes to form 4 1/2-in. (11-cm) sticks using Utility Knife. Place candy cane tops into resealable plastic bag and crush using flat side of Meat Tenderizer; set aside.

Using Medium Scoop, scoop brownie into 24 rounded scoops, packing brownie into scoop using hands. (Entire brownie will be used.) Roll brownie scoops into smooth balls. Insert candy cane sticks into centers of balls, mounding brownie around stick.

Place almond bark into Small Batter Bowl; microwave according to package directions until melted and smooth. Spoon melted bark evenly over each brownie ball, turning to coat completely. Allow excess bark to drip off. Dip into reserved crushed candy canes or additional decorations (see Cook 's Tip) and stand upright on a piece of Parchment Paper. Repeat with remaining almond bark, lollipops and crushed candy. Let stand until set. Place into miniature cupcake liners.

Cook's Tips:
While still slightly warm, the fudgy brownie rolls easily into balls. Although the edges of the brownie are crusty, they do not need to be discarded. Simply scoop the edges along with the center, and they will soften as they stand.
Lollipops can also be decorated with colored sugars or nonpareils.

Wrap lollipops in cellophane, tie with ribbon and use as table décor, place settings or take-home party favors for a special holiday touch.
